Mexican Buffet Menu
Most people love Mexican food. A buffet of Mexican
style dishes would be a great menu option for a coed
baby shower, especially if there is going to be a
Mexican fiesta theme. Even someone with limited
culinary skills should be able to put this type of
meal together.
Tortilla chips and salsa have become staples at many
parties, so they would be a great start for this
one. You may want to serve a variety of salsas,
with varying levels of heat. You could also prepare
a layered Mexican dip. A slow cooker filled with
cheese sauce would allow people to make their own
nachos. Have guacamole, sour cream and jalapeno
slices on hand for topping.

make your own taco bar would go over well with the
baby shower guests. Let the guests choose from hard
taco shells or soft flour tortillas (preferably
warmed). Cook up a batch of seasoned taco meat and
keep it warm in a slow cooker. You may also wish to
serve refried or black beans for those wanting a
vegetarian option. Serve with the traditional taco
fillings, such as shredded lettuce, chopped
tomatoes, shredded cheddar cheese, sour cream and
salsa. You could let guests make their own taco
salads by offering taco salad shells and spicy ranch
dressing. This concept could also be used for a
fajita bar, with seasoned cooked chicken or beef
strips, onions and peppers.
You
may wish to offer enchiladas, burritos, or some type
of Mexican style casserole. Check your grocer’s
freezer, as they often have many Mexican appetizers
and entrees that are simply heat and eat.
You
may wish to offer some Mexican style desserts along
with the baby shower cake. Flan, a rich caramel
custard, and Mexican wedding cookies would be
excellent choices. For beverages, you could serve a
pitcher of virgin margaritas or non-alcoholic
sangria.
